     Mediterranean Pasta

Ingredients
8 oz to 1 lb (depending on what type) cooked Pasta
8 Green Onions, chopped
3-5 cloves Garlic, minced
2 T Olive Oil
12 oz jar marinated Artichoke Hearts, undrained
6 Roma Tomatoes, chopped
1 cup sliced Mushrooms
1/2 cup dry White Wine
2 tsp dried Italian Seasonings
 
1/4 tsp dried Rosemary
Salt and Pepper, to taste
Freshly grated Parmesan Cheese
Sauteed Chicken or Shrimp (1/2 Rotisserie chicken, shredded)

Instructions
Saute onions and garlic in olive oil over medium heat. Cook until tender. Stir in artichoke hearts, tomatoes, mushrooms and seasonings. Bring to a boil, reduce heat and simmer 5 minutes. Add chicken (or shrimp). Pour over cooked pasta and combine. Top with parmesan cheese.
