     Traditional Shepherd's Pie

Ingredients
1 T Butter
1 T Olive Oil
1 Onion, diced
2 Carrots, sliced
2 stalks Celery, sliced
2 cloves Garlic, minced
Salt and Pepper to taste
1 T Tomato Paste
2 lbs lean Ground Beef
 
2 T Worcestershire Sauce
1 cup Beef Stock
1-1/2 cups Peas (I use Green Beans)
CHEESY MASHED POTATOES- 4 lbs Yukon-quartered, 4 T Butter,
1/4 cup Heavy Cream, 1 cup White Cheddar Cheese - grated

Instructions
Preheat oven to 400 degrees. Add butter and oil to skillet, saute onions, celery, carrots and garlic until tender. Season with salt and pepper. Add tomato paste and mix. Add ground beef and brown. Add worcestershire and beef stock. Re-season with salt and pepper. Simmer 10 minutes. Add green beans (or peas). Mix. Transfer to baking dish. Cover with mashed potatoes. Cook 20 minutes in oven.
MASHED POTATOES- Fill saucepan with cold water and salt. Add potatoes, bring to boil. Cook until tender. Add butter and cream and begin to mash until smooth. Add cheese, mix well. Season with salt and pepper. (For a quick version, I use 2 pkgs of Ore-Ida Easy Mash Potatoes and add butter, cream, cheddar cheese to this.)
