     Beef Pot Roast

Ingredients
3-4 lb Beef Pot Roast
1 can Cream Mushroom Soup
1 pkg Knorr French Onion Soup Mix
3/4 cup Red Wine
2-3 cups Beef Broth
1 medium Onion, chopped
2 stalks sliced Celery
small bag of Baby Carrots
6-7 large Red Potatoes, quartered
 

Instructions
Saute onions an celery in olive oil until tender. Meanwhile, in seperate bowl, mix soup, wine and broth. Add salt and pepper.
Brown roast on all sides in onion and celery mixture. (It's easier if you divide the roast in 2 pieces, first). Add liquid soup mixture. Add carrots and potatoes. Cook 4-5 hours on high in crock pot.
