     Spinach Lasagna

Ingredients
2 C mozzerella
1 15oz container ricotta
2 eggs
1/4 C parsley
1/2 tsp pepper
2 tbl butter
onion powder
1 1/2 C chopped mushrooms
1 minced garlic clove
 
1/4 C marsals
2 pkgs drained chopped spinach
10 Lasagna noodles
2 tbls flour
1/4 C half and half
1/2 tsp red pepper
2 C grated cheese
1/2 lb proscuitto

Instructions
Heat oven to 400. Grease 13x9 inch baking dish. Mix mozzerella, ricotta, eggs, parsley, pepper and nutmeg. Heat 2 tbls butter with onion powder. add mushrooms and minced garlic. Cook 5 min. Add marsala and cook till liquid evaporates. Add spinach to skillet and cook 2-3 min...Stir in ricotta. Cook lasagna noodles and drain.
Prepare sauce by combining 2 tbsp flour, half and half, red pepper..Cook till slightly thickened. Stir in 2 C grated cheese.
To assemble...Spread 1/4 C sauce over bottom. Layer 3 noodles. Top with 5 slices of proscuitto. Cover with 1/3 ricotta mixture and sauce...top again with noodles,proscuitto, ricotta and sauce and mozzerella...Bake 40 min
