     Asparagus w/ Roquefort sauce

Ingredients
1 lb fresh asparagus
3 tbs blue cheese
3/4 C milk
1/4 C lt Cream
2 tbls white wine
2 tbls sherry
2 tbls instant flour
2 tbl butter
salt
 
pepper
paprika
3 tbls butter
3/4 C bread crumbs

Instructions
Boil asparagus in salted water till tender...Drain. Pour milk, cream, wine and sherry into saucepan. Add flour...Stir till dissolved. Add 2 tbls butter. Cook stirring constantly until sauce is thick...Reduce flame and add cheese. Simmer 3-5 min. Add salt and pepper. Preheat oven to 375...Place asparagus in a dish. Pour sauce over ...melt 3 tbls butter in saucepan..add bread crumbs...sprinkle crumbs over asparagus...sprinkle with paprika...Bake 20-25 min
