Rinse bird, then pat dry. Remove giblets and insides. Pre-heat oven
to 450 degrees. Rub outside bird with oil. Lightly salt cavity with
salt. Secure legs and wings. Roast 30 minutes. Reduce oven to 325
degrees.
Continue roasting until thermometer inserted into thickest part of
thigh without touching bone. Turkey is done roasting before
roasting registers at 180 degrees. Bste occasionally with 2 cups of
broth.
An 18-20 lb turkey takes about 3 hours. (13 lb turkey takes
approximately 2-2 1/2 hours) Meat thermometer helps.
