     Chicken Cream Cheese Spinach Enchiladas

Ingredients
4-5 pre-cooked chicken breasts
(for quick preperation you can use canned white meat chicken)
16 oz. cream cheese softened
1 bag frozen spinach
( if preferred use chopped fresh spinach)
grated cheese
small flour or corn tortilla shells or both
2 0r 3 10 oz. cans enchilada sauce
 

Instructions
cover bottom of 9x11 baking dish with about a cup of enchilada sauce. with fork shred cooked chicken and mix with soften cream cheese and chopped spinach. spread tablespoon sized amount onto tortilla shell and sprinkle small amount grated cheese. Fold shell into thirds and place face down into pan.
continue placing stuffed tortilla shells side by side until pan is full and mixture is gone pour two cans of enchilada sauce over tortilla shells until completely covered (use more sauce if needed) cover with grated cheese and black olives (optional) bake 350 for 35 mins or until cheese is melted and sauce is bubbling
