Saute onion in fat until clear. Add flour and blend. Add milk and spinach water, stirring rapidly until sauce thickens. Simmer slowly for 5 -7 minutes. Add seasoning. Add thawed, drained spinach and heat to serving temperature. Note- may need to press spinach in colander to remove spinach water.
