Preheat oven to 400. Trim meat. In heavy skillet brown roast on all sides in oil, adding salt and pepper to taste. Remove pork and add remaining ingredients. Cook and stir until sugar dissolves and mixture comes to a boil.

Place pork in a roasting pan and cook for 30 minutes. Pour apple mixture over meat and cook additional 30-45 minutes, basting occassionally with sauce until cooked through.

|
Cool completely. Thinly slice pork and bag with sauce. Freeze. Thaw overnight.
