     Chicken Broccoli Casserole, Gluten-Free Style

Ingredients
3 broccoli crowns, only florets
2 large chicken breasts, cooked and cut into bite-size peices or 2 cups cooked chicken peices
3 cups milk, devided
1/2 cup water
2 tsp curry powder
2 Tbsp vinegar
1 Tbsp lemon juice
1/2 c. Mayonnaise
1 Tbsp Better than Boillon Chicken flavor (chicken soup base)
 
3/4 c. shredded cheddar cheese
2 c. cooked rice
1/4 c. butter
2 Tbsp corn starch

Instructions
Steam or boil broccoli florets until fork tender, about 10 minutes; drain. Mix broccoli and cooked chicken pieces in a large skillet set on med-hi heat. Add butter and melt while mixing to coat the chicken and broccoli.
Add water and bouillon. Mix until dissolved. Add milk, reserving 1/4 c. Add curry powder, vinegar, lemon juice, and mayonnaise. Mix well.
In a small bowl or cup, mix together the reserved 1/4 c. milk and corn starch. After the broccoli mixture reaches a boil (about 3 minutes), add the cornstarch mixture to the broccoli mixture and stir until blended. Continue to boil until thickened to your satisfaction, then turn off heat and remove from stove.
Sprinkle the cheese on top, and serve when the cheese is melted, about 3 minutes. Serve with hot rice.
