9 slices Texas Toast
|

1 tsp. Cinnamon
|
|
2 Tbls Butter
|
|
1 Cup Orange Juice
|
|
1/2 tsp. Vanilla or Almond Extract
|

1/2 tsp. Nutmeg
|
|
4 eggs Eggs
|
|
1 cup Maple Syrup - heated
|
|
1/3 C Sugar
|

Instructions |

|
Scramble eggs.
Add 1 C orange juice, vanilla or almond extract, nutmeg.
Mix well.
|

|
Dip in Texas Toast until saturated. Be careful, it can go to mush pretty quick.
Fry bread in a hot frying pan until golden on both sides.

Spread toast with butter.
Sprinkle Cinnamon Sugar over the top of each slice.
Pour gently with Maple Syrup.
