     Fried Filet of Sole in Wine and Brandy batter

Ingredients
2 lbs fillet of sole
2 egg yolks, beaten
salt and pepper
1 C instant flour
1/4 C white wine
2 egg whites, beaten till stiff
2 tbl brandy
1/4 C cold water
oil
 
Sauce ingred
1/2 C sugar
4 tsp cornstarch
dash salt
6 tbl cold water
4 tbl vinegar
2 tbl soy sauce
1 tbl dry white wine

Instructions
Wash and dry sole. Cut each piece of fillet lengthwise in 1/2. Sprinkle with salt and peppeer. Pour wine, brandy, water and 1/2 tsp salt in bowl. Add egg yolks. Mix well.. Add flour and blend...Fold in egg whites...Heat oil to 350. Dip each piece of fillet in batter and fry.
Serve with Sweet and Sour sauce.. Sauce....In pan combine all sauce ingredients and cook and stir till thickened and bubbly
