     Peppermint ‘n Chocolate Bars

Ingredients
CRUST- 1/2 Cup Sugar
1/3 cup unsweetened cocoa
1 teaspoon vanilla
1 ½ cups graham cracker crumbs
FILLING- 2 cups powdered sugar
½ cup butter (softened)
2 tablespoons milk
1 teaspoon peppermint extract
3 drops green food color
 
GLAZE- 1/3 cup semi-sweet chocolate chips
1 teaspoon vegetable oil

Instructions
Combine ½ cup butter, sugar, cocoa and vanilla in 2 quart saucepan. Cook over medium heat, stirring constantly, until butter is melted and mixture is smooth (1 to 2 minutes). Stir in graham cracker crumbs. Press mixture firmly into bottom of 9 x 13 inch baking pan. Refrigerate 20 minutes.
Combine all filling ingredients in small mixing bowl. Beat at medium speed, scraping sides of bowl often, until smooth (2 to 3 minutes). Spread filling evenly over crust. Refrigerate 20 minutes.
Melt chocolate chips and oil over low heat, stirring constantly, until smooth (2 to 4 minutes). Drizzle over bars. Cover and refrigerate 2 to 3 hours. Cut into bars. Store refrigerated.
