     Chicken Pot Pie

Ingredients
1 cup chopped celery
1 cup chopped onion
1 cup chopped carrots
1/2 stick butter
1/2 cup flour
salt and pepper to taste
1 can chicken broth
1 cup half and half
1 large potato, diced and pareboiled
 
2 chicken breasts, boiled &chopped
1 Pillsbury pie crust

Instructions
Saute celery, onions and carrots in 1/2 stick butter. Add 1/2 cup flour, salt and pepper to taste. Stir. Add chicken broth and half and half. Stir well.
Add cooked chicken and pareboiled potatoes. Pour into casserole pan. Top with Pillsbury pie crust.
Bake at 350 degrees for 30 to 45 minutes.
