1 medium shallot, finely chopped, or a little bit of a mild onion
1 T chopped chives
1/4 t cayenne pepper
Dash of hot sauce
Kosher salt and fresh ground black pepper
Instructions
Preheat oil in deep fryer to 350. Put flour in to a bowl for dredging. In another bowl combine panko, parmesan, parsley and red pepper. Also add salt and pepper to taste. In a third bowl add eggs and water. Dredge the zucchini in flour, then egg, then panko. Work in batches, fry the zucchini until golden brown 3-4 minutes. Don't overcrowd. Drain on paper towels and salt and pepper.
For the sauce- Mix everything together, cover and chill for at least 1 hour. If you don't use shallots, be sure to chop the onion very fine.
