     White Cake for Coconut Cake

Ingredients
2 cups sifted cake flour
2 1/2 t baking powder
3/4 t salt
1 cup - 1/4 cup sugar
1/2 cup shortening
3/4 cup milk
1 t vanilla
3 egg whites
 

Instructions
Grease and flour two 8-inch cake pans. Preheat oven to 375. Beat egg whites until foamy; gradually add 1/4 cup sugar; continue beating until stiff peaks form.
Sift dry ingredients together (using remaining 1 cup sugar). Beat shortening to soften; sift in dry ingredients. Add milk and vanilla; mix until combined. Beat for 2 minutes. Add egg white mixture; beat 1 minute longer.
Turn into pans. Bake for 25 minutes. Frost with Seven Minute Frosting.
