     Spicy Chicken Enchilada

Ingredients
4 cups bottled salsa, mild chunky Pace salsa recommended
8 oz. fat free sour cream
6 (10-inch) Japaleno tortillas or regular flour tortillas
3 chopped cooked chicken breasts
2 chopped tomatoes
3 chopped bell peppers (orange, yellow, and green)
1/2 an onion chopped
Cooking spray
1 package of shredded cheddar cheese
 
Lemon pepper

Instructions
Preheat oven to 350 degrees. Saute onions and add chopped chicken, season chicken with salt and lemon pepper. Combine 2 cups of salsa and sour cream in a small bowl. Spread mixture evenly over of each tortilla. Add chopped peppers, tomatoes, and chicken evenly down the center of each tortilla, and roll up. Spray pan with cooking spray and place rolls, seam side down, in an 11x7-inch baking dish. Top with remaining 2 cups of salsa. Bake at 350 degrees for 15 minutes. Sprinkle with cheese; bake an additional 5 minutes or until cheese melts.
Serving Suggestions
Chopped apples are good added to the recipe. Have yet to try corn, mushrooms, and any other creative ingredent to the recipe.
