1 cup salad oil Can use 1/2 c oil, 1/2 c applesauce)
2 cup peeled zucchini cut in small chunks
2 teaspoons vanilla
3 eggs
3 cups flour
1 cup brown sugar
1 cup white sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
Instructions
Place 1st four ingredients in blender and blend until smooth.
Mix dry ingredients in large bowl. Add liquid from blender. Stir until moist. Pour into 2 9 x 4 loaf pans that are greased and floured. Bake at 350 degrees for 50 - 60 minutes.
