Stir together oil, milk, buttermilk,and eggs.
Meanwhile, heat a greased pan or griddle over medium
heat until water sprinkled on it jumps.

Sift together flour with sugar. Whisk together eggs, oil, and milks.
Stir wet and dry ingredients together until mixed. Batter
will still be slightly lumpy. Let stand for a couple
of minutes for fluffier pancakes.

Pour approximately 1/4 c. batter on griddle for each
pancake. Turn when bubbles form on top. Cook until
brown.

|
Note- recipe may be halved for fewer pancakes. This
recipe can serve 4-6.
The temperature of the griddle is most important to the success of the
pancakes. Make sure it is hot enough and always do the water test! (see
above)

Serve with butter and syrup. You may add other ingredients such as chocolate chips, bananas, etc. to the batter before cooking.
