     Baked Penne with Ricotta & Sausage

Ingredients
2tsp Vegetable Oil
2 red Onions, peeled & sliced
1 red Chilli, finely chopped
2 Garlic Cloves, sliced
200g good quality herbed Sausages, grilled
until cooked through, cooled & thickly siced
350g Penne, cooked & drained
200g Ricotta
2 ripe Tomatoes, finely chopped
 
10g Parmesan Shavings, plux extra to serve

Instructions
Heat the oil in frying pan over a medium heat. Add the onions, chilli & garlic and fry for 3-4 minutes or until softened Add sausages, pasta, ricotta & chopped tomatoes & stir
Transfer mixture to ove proof dish & sprinkle with Parmesan Shavings If for Freezing - cool, cover with cling film & put in freezer
If not Freezing - Bake in a preheated oven for 10-12 minutes at 180C/Gas4 until the cheese has melted and is golden brown
From Frozen- Preheat oven to 180C/Gas4. Cover with tin foil and leave for 40 minutes. After 40 mins remove tin foil & cook for further 10 minutes until golden brown & bubbling
