Preheat oven to 200C/Gas6.
Line baking tray with non stick baking paper
Roll the pastry out to a 2mm thick rectangle & place on tray
Cover with another sheet of non stick baking paper & place another baking tray on top
Bake in oven for 5 minutes or until the pastry starts to rise
Remove from oven & set aside to cool
Heat olive oil in a heavy based pan over a high heat
