     Butter Bean Soup

Ingredients
2 cans (15.5 oz) Butter Beans (no syrup)
1 medium onion, diced
1 stalk celery, sliced
8 oz ham, diced
1 tsp dried thyme
1 tsp dried basil
1/2 tsp dried dill
2 bay leaves
Pinch or two of salt, if desired
 
Ground pepper, to taste
1 Tbsp olive oil
1 chicken bouillon cube

Instructions
Dice onion and celery and saute in olive oil until soft. Add the diced ham.
Add two cans of butter beans and about 1/2 can of extra water. Do not drain the butter beans and don't use the ones that come in a sugar based syrup.
Add the herbs and bouillon cube.
Simmer over low to medium heat for 30-45 minutes.
