Sprinkle chicken with salt and pepper. Let sit in
covered bowl in refrigerator for 1-3 hours.
Pour oil about an inch deep in a heavy skillet.
Heat to about 375 degrees. Roll chicken in flour,
dip in milk, then dip again in flour. Place in hot
oil and fry until brown on both sides, turning once
during cooking. Remove from oil and drain.
