Place fish steaks in a shallow dish. Combine evoo, wine vinegar, lemon or lime juice, sherry, soy sauce, ginger, garlic, peppercorns and oregano in a bowl. Mix well. Pour over the fish steaks.
Marinate in the refrigerator for 6 hours, turning 2 to 3 times. Drain and discard marinade.
Grill fish over hot coals until it flakes easily, turning occasionally.
