     Buffalo Chicken Wings

Ingredients
Chicken wings- divided into drums and flats
flour
salt and pepper
1/4 c. hot sauce (I like Texas Pete)
2 Tbs. butter
Oil for frying- Peanut works well.
 

Instructions
Salt and pepper wing pieces. Put some flour in a bag and place wings in bag. Shake to coat well. Meanwhile, make sauce by mixing hot sauce and butter in a saucepan. Simmer 5 min.
Heat oil in a deep fryer or Dutch oven. Fry wings a few at a time until done, about 7-10 min. Drain wings on paper, put in a bowl, and toss with wing sauce.
Serving Suggestions
Serve with bleu cheese and celery.
