     Quick Greek Chicken Pie

Ingredients
1 large rotisserie Chicken, deboned, skinned and shredded
1 cup (250ml) diced Danish Feta Cheese
1 packet (150g) English Spinach, blanched and drained
1 tub (250ml) Sour Cream
3 large Eggs, beaten
Salt and milled Pepper
3 sheets Phyllo Pastry
Olive Oil, to brush
 

Instructions
Preheat oven to 180°C. Toss chicken, feta and spinach together in a large ovenproof dish.
Mix cream and eggs together and season. Stir through chicken mixture.
Halve phyllo sheets and brush generously with olive oil. Cover pie with phyllo, tucking pastry in around the sides.
Bake for 25-30 minutes, or until golden and heated through.
Serving Suggestions
Serve with risoni (small rice-shaped pasta).
