Ingredients
Meatballs- 1/2 lb lean ground beef
1 egg lightly beaten
2 Tbs bread crumbs
1 Tbs parmsean cheese
1/2 tsp basil
1/2 tbs onion powder
dash of garlic powder
Soup- 6 cups chicken broth
 
2 cups shredded escarole
1 cup orzo
1/3 cup finely chopped carrots
1/3 cup finely chopped celery

Instructions
roll meat into 1 inch meatballs
place all ingredients into a pot of hot broth
boil for 10 min. serve
if serving as a meal, double everything except broth.
