Cook 1 cup long-grain white rice according to package instructions. In a medium skillet, heat 2 Tbs. olive oil over medium-high heat. Add 1 garlic clove, minced, and 1/2 pound medium shrimp, peeled and deveined, and cook until shrimp are opaque throughout (about 2 min.) Transfer to a large bowl and add cooked rice, 1 cup packed fresh parsley leaves, chopped, and 1-2 Tbs. fresh lemon juice. Season with coarse salt and ground pepper.
