Ingredients
4 garlic cloves- minced
2 tablespoons butter
1 tablespoon chopped fresh basil
4 large tomatoes, peeled and chopped
1 tablespoon tomato paste
1 tablespoon olive oil
2 teaspoons lemon juice
1 teaspoon honey
4 slices mozzarella cheese, halved
 
salt & pepper to taste
thick crusted italian loaf (8 slices)
shallots

Instructions
Preheat oven broiler. Toast bread until golden brown (approximately 2-3 minutes). Mix garlic, butter, shallots, and basil together in a small bowl. Spread butter mixture onto each slice evenly.
Combine tomatoes, and tomato paste in a large bowl, set aside. Whisk together lemon juice, olive oil, and honey in small bowl. Spoon tomato mixture on each slice, then drizzle olive oil mixture on top. Place mozzarella and salt&pepper.
Return to broiler, cook until cheese has melted. 1-2 minutes. Serve immediately.
