     Vegetable Couscous

Ingredients
2 cups (500ml) Couscous
1 Onion, chopped
2 cloves Garlic, chopped
1 Carrot, sliced
1 Green Pepper, sliced
1 Brinjal, diced
1 Chilli, chopped
2 tsp (10ml) Paprika
1 Tbsp (15ml) ground Cumin
 
Salt and milled Pepper
1 can (410g) Chickpeas, drained
Olive Oil, for frying
4 Tomatoes, seeded and chopped
1 cup (250ml) Peas
2 Tbsp (30ml) Butter
cup (125ml) chopped Mint

Instructions
Prepare couscous as per instructions.
Fry onion, garlic, carrot, pepper, brinjal, chilli and spices. Season. Add chickpeas and couscous and mix well.
Add tomatoes and peas and cook for another 30 minutes.
Fluff couscous and fork through butter and mint before serving.
