     Thai Prawn Salad

Ingredients
Dressing-
1 Tbsp (15ml) grated Ginger
1 red Chilli, deseeded and chopped
Juice and grated peel of 1 large Lime (about 3 Tbsp)
2 Tbsp (30ml) light Soy Sauce
2 Tbsp (30ml) Fish Sauce
½ tsp (3ml) Brown Sugar
½ bag (250g) rice noodles
 
1 Tbsp (15ml) Oil
16 Prawns, ready-cooked and defrosted
Juice of 1 Lemon (about ¼ cup)
1 cup (250ml) diced Manga (about 1 large mango)
1½ cups (375ml) diced Cucumber
1 packet (175g) Mangetout, halved
1/3 cup (80ml) chopped Coriander
½ packet (20g) Salad Onions, chopped
2 Tbsp (30ml) Sesame Seeds, toasted

Instructions
Dressing- Whisk dressing ingredients together and set aside. Place noodles in a bowl. Submerge in boiling water, cover with a lid and leave for about 3-5 minutes or until tender. Drain and rinse under cool running water.
Heat oil in a non-stick pan. Add prawns and lemon juice and cook for about 30 seconds, or until heated through.
Toss all ingredients together.
Serving Suggestions
Serve with chopsticks.
