     Vietnamese Pineapple Cashew Chicken

Ingredients
2 Tbsp (30ml) fresh or desiccated Coconut
½ cup (125ml) raw Cashews
Peanut oil, for frying
1 Onion, finely chopped
1 tsp (5ml) crushed Garlic
2 tsp (10ml) chopped red Chilli
400g Chicken thigh fillets, finely sliced
1 Red Pepper, sliced
3 Tbsp (45ml) Ong's Stir-Fry Sauce
 
1 Tbsp (15ml) Fish sauce
1 tsp (5ml) Sugar
2 cups (500ml) chopped fresh Pineapple
3 small Spring Onions, sliced

Instructions
Dry-fry coconut and cashews separately until lightly browned. Remove and set aside.
Heat a little oil and fry onion, garlic and chilli for a few minutes. Add chicken. Fry until lightly browned. Add red pepper and continue to fry for 3-4 minutes.
Mix stir-fry sauce, fish sauce, cashews, sugar and pineapple together and fry for a few minutes, until golden and glossy.
Arrange on a serving dish and scatter with toasted coconut and spring onion.
Serving Suggestions
Serve with Jasmine rice.
