     Southwestern Black Bean Salad

Ingredients
1 can black beans, rinsed and drained
1 diced red pepper
1 cup cooked corn kernels
1 red/white onion, finely chopped
1/4 cup chopped cilantro
4 scallions/green onions thinly sliced
1 jalapeno pepper, seede, deveined and finely chopped (optional)
4 teaspoons fresh lime juice
4 teaspoons olive oil
 
2 garlic cloves, finely choppd
Salt and freshly ground pepper, to taste

Instructions
In large mixing bowl, combine all the ingredients; toss to combine. Let stand, covered, until the flavors are blended, at least 1 hour.
