     Low Fat Banana Bread

Ingredients
2 eggs
½ cup white sugar
2 very ripe bananas
½ cup applesauce not sweetened
1 T vegetable oil
¾ tsp vanilla extract
1 ¼ cup whole wheat flour
½ cup white flour
2 tsp baking powder
 
¼ tsp salt
½ tsp baking soda
Optional- chocolate chips and/or walnuts

Instructions
Preheat oven to 325 degrees. Spray a bread pan with pam and lightly dust with flour.
In large bowl beat eggs and sugar until light and fluffy, about 3 minutes. Beat in applesauce, milk, oil, vanilla, and mashed bananas.
In a separate bowl, mix together flour, baking powder, baking soda, and salt. Stir flour mixture into banana mixture, mixing just until blended. Add nuts and chips if desired. Pour into prepared pan.
Bake until golden, and toothpick inserted into center comes out clean, about one hour. Turn bread out onto a wire rack and cool.
