     Chicken-Fried Steak

Ingredients
1 1/2 pounds beef round steak, cut 1/2 inch thick
1 beaten egg
1 tablespoon milk
1 cup finely crushed saltine crackers (about 28)
1/4 teaspoon pepper
1/4 cup cooking oil
 

Instructions
Trim excess fat from meat; cut into 6 serving-size pieces. With meat mallet pound meat to 1/4-inch thick.
Combine egg and milk; combine crushed saltine crackers and pepper. Dip meat into egg mixture; then into crumbs.
In a 10-inch skillet brown the meat, 3 pieces at a time, on both sides in hot cooking oil. Drain off excess fat. Return all meat to the skillet.
Cover tightly; cook over low heat for 45 to 50 minutes or till meat is tender.
Serving Suggestions
Serve covered with pepper gravy.
