1 - 2 1/2 to 3 pound broiler-fryer chicken, cut up
1/4 cup flour
1 1/2 teaspoons salt
1 teaspoon paprika
1/4 teaspoon pepper
2 tablespoons cooking oil or shortening
Instructions
Rinse chicken pieces; pat dry with paper toweling.
In a plastic or paper bag combine flour, salt, paprika, and pepper.
Add a few chicken pieces at a time and shake to coat pieces.
IN a 12-inch skillet heat cooking oil or shortening.
Add chicken, with meaty pieces toward the center of the skillet.
Cook, uncovered, over medium heat for 10 to 15 minutes, turning to brown evenly.
Reduce heat to medium-low; cook chicken, uncovered, about 45 minutes more till tender,
Turn occasionally.
Drain on paper toweling before serving.
