     Ham with Red-Eye Gravy

Ingredients
3 slices country-style ham, cut 1/2 inch thick
2/3 cup boiling water
1 teaspoon instant coffee crystals
Hot cooked grits or Hot Biscuits
 

Instructions
Cut ham slices in half crosswise. Trim excess fat from the ham slices. In skillet cook fat trimming until crisp; discard trimmings.
Cook ham slices in hot fat for 5 to 6 minutes o each side or till brown. Transfer ham to a platter; keep warm.
Stir boiling water and instant coffee crystals into pan drippings. Cook 2 to 3 minutes or till mixture is reduced by half, scraping pan to loosen crusty bits.
Serving Suggestions
Serve warm gravy over ham with grits or biscuits.
