     Chicken -Summer Bounty Chicken, Veggies, Pineapple

Ingredients
6 skinless, boneless chicken breasts
1 tsp salt
1 tsp ground black pepper
1/4 cup orange juice concentrate, thawed
1 Tbs honey
3 Tbs fresh basil, chopped
2 cloves garlic, minced
2 red bell peppers, seeded and chopped
2 zucchini, sliced
 
1 14oz can pinapple chunks in juice, drained

Instructions
Season chicken breasts with salt and pepper. Place in Crock Pot.
In small bowl, combine the orange juice concentrate, honey, basil and garlic. Add the peppers, zucchini and pineapple chunks to crock pot and pour orange juice sauce over all ingredients.
Cover- cook on low 6 to 8 hours ( or on High 3 to 4).
Serve over fluffy white rice.
Serving Suggestions
I made is without the zucchini and it was great.
