Mix first 6 ingredients for dressing. Cook and drain noodles. Add half of dressing to noodles and refrigerate. The original recipe said refrigerate of 6-8 hours. I've done smaller batches with only 1 1/2 hours of refrigeration.
Just before serving add cilantro and green onions. Now also add any vegetables or meat you like. I use sliced carrots and radishes and sometimes frozen peas. Add more dressing to taste and serve. You may serve cold or at room temperature.
You may also add sprinkle with sesame seeds if you would like.
I use 1/2 the recipe, veggies only,no meat and we get 4 plus, hearty, servings.
