     Clam Chowder

Ingredients
18oz more or less chopped clams, fresh or canned
3 slices thick bacon, chopped
4-5 potatoes peeled and chopped
1 c chopped onion
2-4 ribs celery, chopped
1/2t salt
1 stick butter
3/4c flour
2c half and half
 
2c milk
1/2t garlic salt
Pepper to taste

Instructions
Save the liquid! Drain or defrost clams.Brown bacon. Add celery, potatoes, onions and salt to pan.Saute over medium heat for 5 minutes.Add the clam liquid and just enough water (if needed) to cover veggies and mix well.Simmer covered, stirring occasionally, 15 minutes or until potatoes and celery are tender.
Heat butter in saucepan until melted.Whisk in the flour until smooth. Add the half and half and milk gradually, continuing whisking. Stirring constantly cook over low heat until thickened.Stir in clams and garlic salt.
Add the clam mixture to the potato mixture and mix gently.Cook until heated through, about 5 mintues. Season with pepper and serve.
Serving Suggestions
Serve with good crusty bread
