     Beef Satay with Peanut sauce

Ingredients
1 Lb beef skirt, flank, or sirloin tip cut into thin, wide strips against the grain of the meat
2 garlic cloves, crushed
3/4 inch piece fresh gingerroot, finely grated
1 Tbsp light brown sugar
1 Tbsp dark soy sauce
1 Tbsp lime juice
2 tsp sesame oil
1 tsp ground coriander
1 tsp ground tumeric
 
1/2 tsp chili powder
Peanut sauce- 2/3 c. coconut milk
1/4 c. chunky peanut butter
1/4 c. grated onion,
2 tsp garlic chili sauce
1/2 Tbsp soy sauce
couple dashes pepper

Instructions
Cut the beef into 1/2 inch cubes and place in large bowl. Add the garlic, ginger, sugar, soysauce, lime juice, sesame oil, ground coriander, tumeric and chili powder. Mix well to coat meat. Cover and let marinate in fridge for at least 2 hours or overnight.
Preheat the boiler to high. To make peanut sauce, place all ingredients in a pan and stir over medium heat until boiling. remove the pan from the heat and keep warm.
Thread the beef strips onto presoaked bamboo skewers. Cook the beef under the hot broiler for 3-5 minutes, turning frequently, until golden. Alternately, barbeque over hot coals. Transfew to large serving plate and serve with peanut sauce.
