     BUTTERNUT SQUASH SOUP

Ingredients
1 large butternut squash
Fresh parsley
4 carrots
1 large onion
3 stalks of celery
5 cloves garlic - minced
2 Tbs. margarine
2 Tbs. onion soup mix
˝ tsp. black pepper
 
2 Tbs. olive oil
1 Tbs. salt

Instructions
Sauté vegetables in margarine and oil.
Cover with water and add spices. Cook for one hour.
Puree vegetables and let simmer a bit longer.
