Ingredients
1 package chopped spinach, thawed
3 beaten eggs
6 tablespoons flour
2 cups cottage cheese
2 cups cheddar cheese, grated
1 teaspoon salt
Pepper to taste
1 teaspoon of Greek Seasoning, optional
Chopped onions and or mushrooms, optional
 
NOTE- This can be made the day before and refrigerated overnight.

Instructions
Beat the eggs and flour until smooth.
Mix the rest of the ingredients and check for seasoning.
Bake uncovered in a 2 quart casserole for an hour at 350 degrees.
Let stand a few minutes before serving.
Serving Suggestions
Serves 6 generously. Enjoy. I always double this!
