Ingredients
1 Tbs. active dry yeast
2 cups water
1 Tbs. Salt
1/3 cup sugar
2 1/2 cups Baker's flour or bread flour
2 1/2 cups All-purpose flour
 

Instructions
In a mixing bowl with dough hook attachment, mix water, sugar, yeast, and salt on speed one for one minute. Add half of both flours and mix on speed 1 until combined. Increase to medium speed and beat dough for 3-4 minutes (dough should be very smooth). Add the rest of the flours 1 cup at a time until dough begins to pull away from sides of bowl. You may need more or less flour than the recipe calls for. Remove dough from bowl and knead on a floured surface until smooth, roughly 5 minutes. Place the dough into a large greased bowl and let rise in a warm place until double, about 1 hour (You can also place the dough in the refrigerator overnight).
Once dough is double in size roll it out on a floured surface to ½ inch thickness. Cut bagels with a bagel cutter. Place cut bagels onto sheet pan with greased parchment paper and allow to rise for 20 minutes.
While bagels are rising bring a large pot of water to a boil and add 1 Tbs. baking soda. Add as many bagels to the boiling water as you can without crowding them. Boil for 1 minute and then flip the bagels and boil for 1 more minute. Remove bagels from the water and allow to dry on wire racks. Place bagels on a sheet pan with parchment paper. Brush bagels with simple egg wash. Bake bagels at 350 degrees F. for 8-10 minutes. Flip bagels over and bake for another 8-10 minutes or until golden brown and crispy.
