     Smokey Salami

Ingredients
4 pounds ground elk, deer, or beef
¼ cup Tender Quick curing salt
2 Tbs. liquid smoke
1 ½ tsp. garlic powder
1 ½ tsp. ground pepper
 

Instructions
In a large bowl, thoroughly mix all the ingredients, cover and chill in the refrigerator for 24 hours. Divide meat mixture into fourths. Shape into a compact 8 inch log. Place each log onto a 12-by-18 piece of nylon net. Roll up tightly; tie ends with string.
Place on broiler pan with a rack and bake in a 225 degree oven for 4 hours. Remove from the oven and remove from the net. Pat rolls well with paper towels. Cool slightly, then wrap in saran wrap and foil.
