     Red Beans and Rice

Ingredients
1 Cup chopped celery
1 1-lb package red (of kidney) beans
1 cup chopped onion
1 cup chopped red pepper
3 or 4 cloves garlic, finely chopped
1 tsp. Celtic sea salt
2 or 3 jalapeno or other hot pepper (optional)
1/3 cup brown or basmati rice
 

Instructions
Soak the beans overnight. Drain, cover with distilled water, and add chopped vegetables. Bring to a boil, and then simmer for about 2 hours.
To prepare brown or basmati rice- Boil 2 cups distilled water and tsp. Celtic Sea Salt. Add 1/3 cups of rice, reduce heat, and simmer for 30 minutes without lifting the lid. Set off stove and let sit for 15 minutes. Fluff with a fork and serve beans over rice.
