     Zucchini Bread

Ingredients
1 cup organic sucanat or white sugar
2 egg whites
1 egg
1/2 cup applesauce, unsweetened
1/2 cup buttermilk
1/4 cup vegetable oil
1 cup whole wheat flour
1 cup whole wheat pastry flour (you can substitute white flour)
1 teaspoon baking soda
 
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1 teaspoon vanilla
1 1/2 cups zucchini, shredded
1/2 cup pecans, chopped

Instructions
Preheat oven to 350 degrees. Grease 2 loaf pans. In a large bowl, mix all dry ingredients well, except sucanat.
Mix eggs together till foamy, add oil, buttermilk, applesauce and sucanat. Beat till incorporated. Add vanilla.
Make a well in the center of the dry ingredients and add wet ingredients. Mix well, but don't overdo it.
Pour batter into both pans and bake for 45 to 55 minutes. Cool in pans for about 10 minutes, then carefully remove from pans and cool on a rack.
