1 cup organic sucanat or white sugar
|
|
2 egg whites
|
|
1 egg
|
|
1/2 cup applesauce, unsweetened
|
|
1/2 cup buttermilk
|
|
1/4 cup vegetable oil
|
|
1 cup whole wheat flour
|
|
1 cup whole wheat pastry flour (you can substitute white flour)
|
|
1 teaspoon baking soda
|
|
|
|
2 teaspoons baking powder
|
|
1 1/2 teaspoons cinnamon
|
|
1 teaspoon vanilla
|
|
1 1/2 cups zucchini, shredded
|
|
1/2 cup pecans, chopped
|

Instructions |
|
|
Preheat oven to 350 degrees. Grease 2 loaf pans.
In a large bowl, mix all dry ingredients well, except sucanat.

Mix eggs together till foamy, add oil, buttermilk, applesauce and sucanat. Beat till incorporated. Add vanilla.
|
|
|
Make a well in the center of the dry ingredients and add wet ingredients. Mix well, but don't overdo it.
|
|
|
Pour batter into both pans and bake for 45 to 55 minutes.
Cool in pans for about 10 minutes, then carefully remove from pans and cool on a rack.
