2 cups zucchini, shredded (2 or 3 cups)

1 egg

3/4 cup sugar

3/4 cup brown sugar

1/2 cup plain yogurt

1/2 cup oil

| |
1 teaspoon vanilla

| |
1/2 cup semisweet chocolate chips or mint chocolate chips (1/2 to 1 cup)

1/2 cup nuts (optional), chopped

Instructions |

|
Combine first 4 ingredients in large bowl.
Stir in shredded zucchini.
|

Combine sugars, yogurt, oil and vanilla in separate bowl and beat with fork. Stir into zucchini mixture.

|
Spread evenly into greased 9 x 13 inch pan.
Sprinkle chocolate chips and option nuts on top of batter.
|
|
|
|
Bake in preheated oven at 350 until toothpick inserted in center comes out clean, 35 - 40 minutes.
