     Green Beans and Cashews

Ingredients
2 lbs fresh green beans
1 cup finely chopped onions
4 tbs butter, melted
3/4 cup salted cashews
juice of one lemon
1/2 tsp. chopped fresh parsley
salt and pepper
 

Instructions
Clean and trim green beans and break in half. Cook in boiling water over high heat for 5-10 minutes or until tender. Drain, rinse, with cold water. Sautee onions in butter in skillet until tender. Add green beans and cashews. Cook 2 minutes. Add lemon juice and parsley. Season with salt and pepper. Serve warm.
