Spread oil on bottom of 11x7 baking dish. Add a single layer of onion. Bake at 375 for 15 minutes. Transfer onions to a large bowl. Add pasta, drained spinach, chicken, tomatoes, cream cheese, salt, and pepper to onion.
Spoon mixture into baking dish and spinkle evenly with cheese. Bake, covered, for 30 minutes; uncover and bake additional 15 minutes or until bubbly.
